Information about our Sushi

Our fish are sourced from Toyosu market in Tokyo, where fish from all over Japan are delivered.

Mr.Nagai always carefully handpicks and purchases fresh fish from the market every day. We use special rice from Niigata prefecture. It's purchased as brown rice and we freshly prepare only the required amount for that day. We adjust the amount of water we use for the rice depending on the current season, temperature, and humidity. In addition,we use two types of vinegar and sugar from Kikaijima(located in Kagoshima prefecture) and traditonal Vietnamese salt, which helps us to create a delicious and original blend of vinegared rice.

We chose this quaint and secluded location for our restaurant as a hideaway from the hectic,bustling city of Tokyo.

We have a space that mimics the quiet elegance of a tea room.

We welcome you with seasonal hanging scrolls and flowers. Enjoy the soothing jazz, the chef's skilled movements,and the elegant plating of your meals.
Everything is carefully planned for your enjoyment.

There is no clock because we want you to just enjoy the moment,and not worry about the constant flow of time. Please enjoy our hospitality.

We use a lot of seasonal fish, vegetables and fruit. In addition to the course meal, you can also order additional pieces of nigiri sushi. We will also recommend Sake that pairs well with the course meal. There are also other alcoholic or soft drink.

Taishou and Okami

Mr. Daisuke Nagai

(Owner sushi chef / Taishou)

 

Daisuke was born in Setagaya,Tokyo in 1973.
He has dreamed of becoming a sushi chef since he was 10 years old.He started training at the age of 16 and has honed his craft at 6 different sushi restaurants over the course of 20 years. Finally, he opened his own sushi restaurant "Sushi Nagai" in 2008. 5 years after opening,he was told that he had cancer and only had 1 year to live, but thankfully, he made a miraculous recovery. However, 2 years after this, he had a heart attack,but again luckily, he recovered once again. He pours his heart and soul into his work every day to bring joy and excitement to his customers.

Mrs. Keiko Nagai

(chef's wife / Okami)

 

Keiko was born in Chiba in 1978.

She spent her childhood in Choushi,a place well known for fish and producing high quality soy sauce .Later,she grew up in Fukushima which is known for producing Sake. That led to her love of sushi and sake.

She studied international relations at university, and wanted to utilize her knowledge to introduce Japanese culture to the world. she went on to obtain a Japanese language teaching qualification. As she gained more experience,she acquired global values and as a result,she has started a range of Japanese culture experience workshops for foreigners since 2023 at Sushi Nagai. Her dream is to provide stunning workshops to introduce Japanese culture and "Sushi Nagai" to the world !
